But why is the old-school chef’s hat, or toque, the shape that it is? The word toque has been around for thousands of years and eventually comes from the Arabic word for “hat.”
In the 19th century, France began using the phrase toque Blanche to refer to the white hat that cooks wore as part of their uniform. By the 19th century, the hat was known as the white hat. So, why white? Legend has it that the personal chef of Charles Talleyrand, who became France’s first prime minister in 1815, thought white the most hygienic of all colors.
The reluctant foodie found a similar story: Antonio Carom, an early pioneer of grand cuisine, believed that white helped to provide a clean kitchen. White is considered the most hygienic color, which helps to describe the cleanliness of the kitchen. It’s not weird in itself to wear some kind of hat while cooking for someone else. On the contrary, it makes sense to keep your hair neat and away from food.
Another theory is that hats originated in Greek Orthodox monasteries in the early Middle Ages. According to an article in the Roanoke Times, “Hats Off to the Chef,” cooks in this period were literate (they had to know how to read recipes).In the 6th century, cooks and other artisans were often persecuted, imprisoned, and even executed. Edwards’ book, The Hat Gala: Ancient and Modern, bears out this theory.
To avoid this persecution, the cooks hid among the clergy. Unlike the clergy, who wore similar black hats and dark clothes, the cooks changed their hats to white to distinguish them from the priests, hoping that white would appease the wrath of God.
Long before the French adopted the hat, a popular origin story dates back to around 146 BC, when the Byzantine Empire invaded Greece. When the invading army landed, the Greek cooks fled to the nearby monasteries for protection, eventually fitting into monastic clothing.
This includes a smokestack hat. Even after the Byzantines were beaten back, Greek cooks continued to wear the hat as a symbol of resistance and solidarity. Perhaps that symbolism and philanthropic feeling inspired other chefs, including French chefs, to adopt the hats in their uniforms, Voss said.
